A tasty alternative to fixing this popular and nutritious vegetable.
Wash artichokes. Soak one hour in salted watrer. Remove smallest leaves around bottom of artichoke. Cut and remove stem. If desired, cut tops off to trim the sharp points off the artichoke leaves.
Place rack or basket in pressure cooker. Add the water, bay leaf, garlic, lemon juice, and soy sauce. Place artichokes on rack or in basket. Seal the cooker and let pressure rise per manufacture's instructions, generally over high heat until steam is first released. Lower heat and cook for about 20 - 25 minutes. Cool cooker at once under cold water per manufacturer's instructions.
May be served hot or chilled with melted butter, mayo, vinaigrette, or any condiment of your choice.
Tip when using electric range: Electric burners do not cool down immediately. If using an electric range, heat two burners, one on high and the other medium. When steam is released move cooker to medium burner.
Pressure cookers vary. Read your manual. These instructions are generic for use cooking on High or at 15 psi.
