Boil whole baby potatoes for 15-20 minutes after boil begins. Rinse cool with cold water and halve. Cool in fried or freezer (or add ice to collander)
Chop bacon into 1 inch lengths and sauté, then remove from pan and put on paper towels to drain. Save grease for next step.
Salt sliced onions with a teaspoon of salt, then Sauté onions in bacon grease, brown and reduce heat to caramelize onions. Approximately 25 minutes.
Combine cold potatoes, bacon, Caramelized onions, add mayo until salad achieves right consistency. Final step is to add blue cheese and chopped chives for color. (optional: try adding a tablespoon of gourmet mustard)
