Suggest a better description1) Put beets in a bamboo steamer or steamer basket. Partially fill a wok or
pot with water (steamer should not touch water) and bring to a rapid simmer.
Place steamer over water, cover, and steam until beets are tender, 15 to 20
minutes (35 to 45 minutes for medium size). Test by inserting a skewer
into thickest part.
2) Immerse in cold water until cool enough to handle, then drain. Gently pull
off skin, and halve or slice beets depending on size. While still warm, toss
with the salad dressing described below, then refrigerate for 1 hour. Drain
beets, reserving dressing.
3) Arrange beets, orange segments, and onion slices on salad greens. Pour
salad dressing over and garnish with toasted nuts.
4) To make salad dressing, mix orange juice, olive oil, vinegar, mint, salt, and
pepper until well combined.
5) To toast almonds, place them in a frying pan over medium heat, and cook
until lightly browned, 3 to 4 minutes. Be careful not to burn.
