A cheap and easy meal using baked beans
Crack the eggs into a bowl, add the baked beans and season to taste. Whisk together.
Melt a small knob of butter in a frying pan. Pour in the mixture and swirl to coat the base of the pan
Cook over medium heat for 3 minutes until the sides begin to set and then flip the omelette over.
Cook for a further minute and then serve with crusty bread.
You may find it easier to put under grill than flipping over! tastes better than it sounds.
