Shredded beef Barbados style
Cut roast into 6-8 large chunks. Season with salt and pepperoni all sides. Heat oil in large skillet and sear beef on all sides until browned. Transfer to slow cooker.
In medium bowl combine chipotle, garlic, cumin, oregano, cloves, beef broth, vinegar, lime juice and additional salt and pepper. Mix then pour over beef and add bay leaves. Cover and cook on low 8-10 hours until meat shards easily.
Remove bay leaves. Remove and shred beef. Return to cooker for~ 10 minutes or until ready to serve
Chipotles add heat. Adjust to taste before adding them.
