This is easy and delicious comfort food. So wonderful to come home from work and have this delicious-smelling dinner ready to eat!
Mix flour, salt, and pepper. Coat the meat. Put all veggies EXCEPT mushrooms in the pot. Put meat on top. Then spread mushrooms on top of roast. Cook Low 10-12 (High 5-6). Turn to High during last hour to soften veggies and make gravy. Mix the flour with some of the broth (or new water/broth if necessary) and add to pot.
