Basic meatloaf with easy staple ingredients that are likely on hand.
Mix all except the tomato sauce together.
Form into loaf - I use a perforated roast pan so the grease drains off as it cooks
Bake at 350 for about 1 hour
Remove from oven and carefully drip half of the tomato sauce over the top
Return to oven about 15 mins.
Remove from oven and carefully drip the remaining tomato sauce over the top. Try to cover the entire surface.
Return to oven about 15 more minutes.
Slice into 6 equal slices to serve.
Watch cooking times - your mileage may vary.
Be sure to mix it up really good to avoid spinach clumps and a cayenne pepper hot spot.
I often substitute dried onion and garlic if I don't have fresh on hand.
