* Cut the tomatoes into a 1/4" dice and place in a bowl. Toss with the minced garlic & shallots.
* Chop the basil and add to the tomatoes, along with the capers, lemon juice, salt & pepper, and 1/3 cup of olive oil. Set aside.
* Heat the 1/4 cup of olive oil in a small skillet. saute the garlic until golden, two to three minutes. Discard the garlic and reserve the oil for later.
* Toast a loaf of French or Italian bread 20 minutes at 350 degrees. Cut each slice on the diagonal, about an inch wide.
* Brush the garlic oil over each slice, spoon the tomato mixture over the bread, and serve immediately.
* The mixture should be served at room temperature.
* Left over Bruschetta can be covered and refrigerated for up to a week.
