***Original recipe calls for 2 teaspoons baking soda & no baking powder
For Cake...
Preheat oven to 350 degrees. Oil and flour a 9 x 13 inch cake pan.
Peel carrots. Then shred or grate the carrots.
Mix dry ingredients in a large bowl. Mix wet ingredients and carrots in another bowl. Pour wet ingredients into dry ingredients & mix together. Pour mixture into the cake pan.
Bake at 350 degrees for 45 minutes - 1 hour or until a knife comes out clean.
Let cool before frosting.
Optional: Add 1/2 cup nuts to cake mix.
*** The key to this recipe is to pack the carrots when measuring them out. You can not use too many carrots.
For Frosting...
Let butter and cream cheese stand until soft. Mix softened butter, powdered sugar, vanilla and cream cheese with an electric mixer until blended.
