My neighbor at our first house in Mableton, Janice Smelcer, made this for me whenm Kelly and Krissy were born. It has become my entire family's favorite and is made every Holiday by me, and now my daughter, Kelly!
Sift together dry ingredients. Add oil and eggs and beat well. Add carrots. Pour into 3 8" greased and floured cake pans. Bake in 350 degree oven @ 25 minutes or until toothpick inserted is clean. Cool completely before icing, @ 1 hour.
Variation: 1/2 cup chopped pecans and 1/2 cup raisins softened in hot water may be added to cake batter. I usually add only the pecans
Frosting: **I usually double the ingredients to have plenty of icing! Also, toasting the pecans really bringsout the flavor! (I just do them in a skillet over med heat for a few minutes, then dump them onto a paper towel to cool. Do this while cakes are in oven) You have to watch closely, once hot they will burn quickly!!
Mix all ingredients. Easier to spread if chilled for @ 20 minutes.
I use a food procesor for carrots, just dont overdo them!
