AWESOME! My favorite tomato soup at the moment. Love it with a gooey grilled cheese.
1. Over medium heat, melt butter in a soup pot. Saute onions until carmelized. Add tomato juice, canned tomatoes, chicken base, sugar, salt and pepper, and stir. Bring to a near boil, then turn off the heat.
2. Add in sherry and cream and stir. Add in parsley and basil to taste.
3. Adjust other seasoning and serve with gooey, yummy grilled cheese or crusty bread. Close your eyes and give thanks for soups like this.
