Use cauliflower to substitute for rice for a Paleo variation on a classic recipe.
Cut the cauliflower in half and cut the florets off from core until you are left with just the core. Discard the core and break up the florets into somewhat evenly sized pieces. Place florets in bowl of food processor in batches. Process until evenly chopped but not completely pulverized.
Heat the sesame oil in a deep pan over medium high heat. Add the garlic and cauliflower - stir frequently until it begin to brown slightly. Made a well in the middle and add the eggs if using. As they start to cook, stir them through the cauliflower mixture. Add the peas & carrots and heat until warmed through. Add with the coconut aminos and meat if using. When everything is warmed through remove from heat and serve. Salt to taste.
