Hearty Chili.
Chop Onion.
Saute beef with onion, garlic, and 1 tbsp of chili powder until onion is soft and meat is browned. Drain the mixture and add to your crockpot.
Drain beans and add to the beef mixture.
Dice celery and add to mixture.
Cover mixture with cans of tomatoes.
Dice up one or two of the chipotle peppers and add to mixture. Add chili powder and stir together.
Cook on high in the crock pot for at least one hour, but 2 to 3hrs works better. You can even cook all day if you would like. Use cayenne pepper, salt, and pepper to reach desired heat level.
Garnish with diced green onion, grated cheese, and sour cream.
