Easy to do, you may use leftovers and it's delicious!
This should work better using a large hot wok or skillet. Place oil until it's hot, add onion and stir fry until it becomes tender, add garlic and ginger and stir fry just for few seconds, add the cold rice, meat, eggs, scallion, celery, pepper, carrots and soybean sprouts. Keep stirring few minutes and when everything is warm add soy sauce, pepper and sugar, if you thing it needs salt add it too. Just be careful because it's easy to become salty. Keep stirring few minutes until everything is perfectly mixed and until rice gets slightly browned.
