Warm potato salad flavored with vinegar and bacon. Delicious alternative to the traditional cold.
Spray or grease baking dish. MIx potatoes, regular chopped onion, salt and pepper together in dish and bake at 450 for 25-30 minutes. Chop slices of bacon and put in skillet. Cook over medium heat until bacon is brown. Drain and set aside reserving bacon fat. Reduce fat to about 1/3 of a cup. In skillet, add to bacon fat, the flour, water, vinegar and sugar stirring until thick. Add bacon, potatoes and green onions to skillet until coated. Season with red pepper and additional salt and pepper if you like. Serve warm.
You can use regular potatoes, peeled and chopped if you like, maybe 4-6. I just found it easier and less time consuming to use the fresh ones in the bag that you find in the produce department of your grocery store.
