Hash made with fresh corn, varied spice & citrus zing for easy to whip up summer side.
Shuck and remove kernels from ears of corn, set aside.
Melt butter in heavy skillet over medium heat, add onion and jalapeno; cook for 3-4 mins until soft.
Sprinkle salt to taste. Toss & cook for another minute or so, then turn heat to medium-high and pour in corn kernels. Cook for a few minutes, tossing or stirring, until corn is cooked. If necessary, add slight water to moisten.
Lastly, season with a squeeze of lime and add the basil.
Taste and adjust seasonings per taste.
This recipe is from Alice Water's wonderful book, "The Art of Simple Food". She does not use basil in the initial recipe, though I have come to prefer it over cilantro, which she suggests.
