A quick and easy healthy dinner for 4
In a large pot with lid place one tablespoon of butter on the bottom add chopped onion. Add quartered and sliced Cabbage. place second tablespoon of butter on top of vegetables close lid and turn stove to low or 3 on an electric range. Stir or fold every 5 to 7 min . Once you start the stove for the vegetables, In a second pot place the rice and and water and start cooking approx 20 min. When the rice is ready turn off heat and let stand remove one can of Corned beef from the fridge open can and dice the contents to about half inch squared chunks . Mix in with the vegetables and replace lid for another 10 min. serve over the rice feeds about 4
make sure the stove is not too high and DO NOT ADD water to the pot with the vegetables in it stir every 5 min or so . Use chilled corned beef as it is easier to cut up in a chilled state.
