Tasty white bread from Mary's Bread Basket and Soup Kettle.
Sprinkle yeast over the warm water in a large mixing bowl. Add the honey and stir until dissolved. In a separate bowl, blend the 3 cups of white flour, soy flour, wheat germ and dry milk. Beat the flour mixture into the yeast mixture until smooth. Add the salt, oil, and enough of the remaining flour to make a soft workable dough. Turn out on a lightly floured board and knead until smooth and elastic, about 10 minutes. Add small amounts of flour if needed to cut the stickiness. Place in a warm, greased bowl, turning to coat the top. Cover with plastic wrap and a towel. Allow to double in bulk, about 1.5 hours. Punch down the dough and allow to rise a second time until doubled, approximately 30 minutes. Turn out on a floured surface and divide in 3 portions. Cover and let rest 10 minutes. Shape into 3 loaves and place in greased loaf pans, 8.5x4.5x2.5". Cover and let rise to tops of pans, about 45 minutes. Bake in a preheated 350 degree oven 45 to 50 minutes. If loaves become too brown, cover with foil the last 15 minutes. Cool on wire racks. Brush loaves with melted butter while hot if desired.
