Line 2 baking trays with non stick baking paper
Use an Electric Beater to beat together the butter, sugar & vanilla in a large bowl until pale and creamy
Add eggs one at a time beating well after each addition until combined
Fold in flower and sultanas until combined
Place cornflakes on a plate and roll tablespoonfulls of the cookie mixture into balls then roll in cornflakes to coat
Bake in preheated oven swapping trays from top to bottom halfway through cooking. Bake for 18-20 minutes or until golden brown.
Remove from oven & set aside on trays for 5 minutes to cool before transferring to a wire rack to cool completely.
