Suggest a better descriptionPreheat the oven to 200 C, 400 F, Gas Mark 6. Place the butter and oil in a roasting pan with the sweet potatoes and roast in the preheated oven for 35 minutes, until soft. Allow to cool slightly and place in a blender or food processor with most of the parsley, the soured cream, lemon juice and seasoning to taste. Blend until smooth and serve hot or cold, sprinkled with the remining chopped parsley. NOTES : A deliciously rich accompaniment, ideal to serve with hot or cold gammon.
