Combine batter ingredients and stir until well blended, let sit 5 minutes.
Dry pickles on paper towels. Start using about 1/2 cup of Panko bread crumbs in a bowl (add more as needed). Work in smaller batches so the pickles will not bleed through the bread crumbs, and retain their crisp texture.
Dip each pickle slice in the wet batter and then gently toss in the bread crumbs, until small batch is finished.
Deep fry in small batches for 3-4 minutes or until brown and crispy.
Serve with ranch dip, or a mixture of ranch dressing and salsa mixed. Both are delish.
