Serves 2 - Srvg Size 1/2 Squash = WW: 5 points per serving and 200 calories
Cut acorn squash in half, lengthwise. Scoop out seeds. Place the squash in a microwave safe covered bowl with an inch of water. Cover and microwave on HIGH about 7-minutes. You want to precook the squash about half way to being done.
While the acorn squash is precooking, put the ham in a medium bowl and 'flake it' with a fork.
Add the chopped mushrooms, celery, spinach and garlic. Stir well.
Stir in the Cream of Mushroom Soup and seasonings.
Remove the squash from the microwave dish and let it cool for at least 15-minutes on a towel to absorb any liquid from steaming.
Spray a small shallow baking dish with olive oil or cooking spray. Stuff each squash with the mixture, pile it high.
Top with Romano cheese and bake at 350-degrees for 45-minutes to an hour depending on how 'soft' the squash is after the microwave.
