Beef slow cooked in beer
1. In a slow cooker set on high, cook the vegetables in the beer and 2 tablespoons of oil for 10 minutes. Add the meat on top of the vegetables and spoon over the tomato paste. Add salt and pepper and herbs. Cook or 1 hour on high, then reduce the heat to a low setting.
2. Add the remaining oil and the flour. Stir to combine all ingredients and cook on a low setting for 8 hours.
3. Remove the bay leaf, taste and adjust the seasoning. Serve with toast.
