A delicious, creamy soup that's an excellent meal all on its own.
Dice all vegetables and bacon.
Fry bacon with half of the onion until both are crispy. Add 2 tbsp of bacon fat to the soup pot and drain off the rest; set aside bacon and onions.
Meanwhile, cook carrots, remaining onion, half potatoes and half broccoli in butter in soup pot for ~10 minutes in butter. Afterward, add all other remaining ingredients except the reserved potatoes and broccoli, cheese, half-and-half, and pepper. Mix thoroughly and allow to simmer gently for an hour.
Once soup has simmered (ensure vegetables are all soft), bring another pot of water to a boil and boil remaining potatoes until softened. While potatoes boil, remove soup from heat and add cheese, then half-and-half. Blend entire pot thoroughly, either in small batches in a traditional blender or with an immersion blender. If using a standard blender, be certain to observe standard safety protocol - don't overfill, and ensure that steam can escape!
Once soup is blended and potatoes are soft, gently fold potatoes and broccoli into soup (finely chopped frozen broccoli should not need extra cooking besides the heat of the soup). Season bowls individually with pepper to taste, and serve with crusty fresh bread!
A blender is required for this recipe. The texture and taste will not be the same if cooked without emulsifying the ingredients together!
