Enchaladas with chicken
Cook chicken, add onions. Mix the sour cream and soup in a bowl. Add chilies to the cooked chicken and 1 tbsp of the sour cream / soup mixture. Roll enchaladas with approx. 1/4 cup of the chicken filling mixture. Place in a greased pan. Cover with remaining sour cream / soup mixture. Bake at 375 F for 15 minutes covered. Sprinkle with cheese and bake uncovered for another 5 minutes. Serve with salsa and sour cream.
