This quick, easy recipe was inspired by Mario Batali and The Plant (http://www.plantchicago.com/)
Put a pot of water on the stove over high heat. Once boiling, cook the pasta to taste.
In a large saucepan, over medium heat add the olive oil and garlic chunks.
Sauté until the garlic is browned.
Add the white wine vinegar and dry white wine to the pan, along with the butter.
Once the butter has melted, add the oyster mushrooms and sauté.
Once the pasta is done, drain the water and add the cooked pasta to the saucepan.
Toss with the mushroom sauce.
Add the spicy greens and the parmesan to the pasta, and toss.
Serve topped with chives.
