Applesauce substituted for oil/eggs in traditional banana bread. Almonds and cranberry added because both houses had surplus.
Preheat oven to 350°F. Lightly spray a 9-inch loaf pan.
Mix peeled bananas, all sugars, and applesauce on low to medium until well combined.
Add whole-wheat flour, baking soda, salt, and cinnamon. Mix until well combined on low-medium.
Add cranberries and almonds, stir until combined.
Pour into greased pan, lightly spread out to make even loaf.
Bake for 40 to 50 minutes or until a toothpick inserted in the middle comes out dry.
Cool in pan for 15 minutes, and then transfer to a cooling rack.
