Cut the squash lengthwise into strips about 1/2-inch thick; peel each strip. Place the squash pieces on a large, double-layer piece of aluminum foil. Melt the butter or margarine in a small saucepan over moderate heat. Add the brown sugar, nutmeg, salt, and pepper, and stir until the mixture is melted and forms a delicious sauce. Pour the sauce over the top of the squash pieces and wrap the foil loosely around the squash, making sure to seal the folds well. Grill about 4 inches from hot coals for about 45 minutes, making sure to turn the package about every 10 minutes, so your veggie will be evenly cooked. Serve warm from the grill.
