A great tasting way to use up that leftover ham.
Cut ham in bite size pieces. Drain pineapple and reserve liquid.
Fry ham and pineapple until hot. Sprinkle on cinnamon to taste.
Combine brown sugar, cornstarch and reserved liquid. Mix until all cornstarch is dissolved. Add liquid mixture to ham and pineapples.
Cook until thickened.
Serve over rice with a vegetable - I prefer peas.
My wife and I like ham but with just the two of us there is so much left over. Found this was a good tasting way to use some of the leftovers.
