Chicken base Italian flavored soup with spinach and tiny Italian meat balls.
Turn crock pot on low.
Add onion, Italian seasoning, white wine, olive oil, pepper, chicken broth, garlic, spinach, and carrots.
Stir & cover.
In large bowl, combine turkey, pesto, Italian bread crumbs, & egg. Mix.
Shape meat mixture into desired size shaped meat balls.
In a frying pan place small amount of olive oil. Take garlic cloves and poke many small holes in them but do not slice! Add the garlic cloves to the oil and Fry over medium heat until the cloves are really brown. Remove cloves.
Place meatballs in the oil carefully and cook until all sides are evenly brown.
Add the cooked meatballs to the crockpot.
Cover and cook. 5-6 hours.
About an hour Before serving, cook pasta in separate pot according to manufacturers directions, drain, and rinse in cold water. Add pasta to the crock pot and cook for remaining time left for the soup.
Enjoy!
With the meatballs, I do 1/2 tsp size ones, but choose a size that you are happy with. The smaller the ball the longer it takes to form all of them. Also, I usually add a small amount of ground beef bullion to the turkey meat so those that may not like the taste of ground turkey meat cannot tell that it is not beef. :-)
