The Ultimate Mac N' Cheese Experience!
Preheat oven to 350 F. Bring water to a boil, salt, and begin cooking pasta until al dente. Strain and set aside. Meanwhile, In a heavy saucepan, over low heat, melt butter. Dice bacon and ham to hearts desire, chop garlic, and shred cheeses. Add bacon to frying pan and begin cooking off over medium heat just until she's started to break down. Add garlic. Sweat garlic with bacon for approx. 2 minutes until bacon begins to brown and garlic is slightly translucent. Add ham. Reduce heat and return to the sauce pan. Once butter has completely melted, add flour and whisk thoroughly to form roux. Turn up heat. Add milk, S&P, and red pepper flakes. Stir sauce until just below boiling point and roux has been completely folded in. reduce heat. add cheddar, 2 cups monterey jack, and mix until melted throughout. Add sauce to frying pan with a dash of cayenne. combine pasta and sauce and lay out in casserole dish. sprinkle bread crumbs on top and bake for 20 minutes. remove from oven and layer remaining cheese on top. place back in oven for 10 more minutes. Yields 8 servings.
For an added kick throw 2 cups diced roasted jalapeƱos to the mix! and if you wanna have some real fun;) freeze, portion, and sear that bad boy!
