This is adapted from Ben and Jerry's.
Using Mix Master, whisk eggs for 2 minutes until light and fluffy. Whisk in sugar bit by bit and whisk for one more minute. Add cream, milk, and 2 tablespoons of freeze-dried coffee and whisk to blend.
Freeze in ice cream maker.
After the ice cream stiffens and is almost done, add 1 more tablespoon of coffee (or even more for very strong coffee ice cream).
Makes 1 quart.
Variations include:
Coffee with Heath Bar:
At the end, add about a cup of frozen Heath Bar pieces (about 4 1.5 oz Heath bars).
Coffee with Oreos:
In a ziplock bag, smash oreos against the counter. Use 2/3 cup to 1 cup.
Kauai Pie (adapted from Lappert's in Hawaii):
Add shredded coconut, chocolate fudge sauce (see recipe adapted from Ben and Jerry's), chopped macadamia nuts, and shortbread cookie pieces. To die for!!
