Recreated this recipe from something we ate years ago at the Texas State Fair.
Start by putting tortilla chips on a plate that can be placed in the oven. Heat the alfredo sauce and tomatoes, as this will cut down on the time it takes to melt the cheese in the oven. Sprinkle smoked sausage, stewed tomatoes, and olives over chips. Top with alfredo sauce and mozzerella. Place plate under broiler until cheese is melted. Remove plate with pot holder. This can made with only one can of stewed tomatoes, but we use lots, so I always open two.
Start with a few chips, as by the time you add all the ingredients, you will have a huge plate of food!
