Saute onion and garlic in reserved fat from sausage - add olive oil, if needed.
Simmer everything except zucchini and parmesan in stock pot for at least 30 minutes.
Add zucchini and pasta 20 minutes before serving.
Garnish with parmesan.
To make ahead, don't add the pasta until you reheat.
