Wonderful 1 dish meal.
Combine paprika, oregano, black pepper and a little salt together. Trim off any fat from chicken thighs and cut each into 3 pieces. Rub spice mixture over and allow to marinate in the fridge, while preparing the vegetables.
Heat 1 to 2 tablespoons of oil in a large paella pan or large deep skillet over medium heat. Saute chorizo sliced or crumbled (if able to get soft sausage) until browned, remove and reserve. Add chicken and brown on all sides, turning with tongs. Remove from pan and reserve with sausage.
Heat water.
In same pan, saute onions, garlic and parsley. May need to add a little oil if it sticks. Add peppers and continue to cook until onion is transparent and peppers are starting to soften. Add tomatoes, when mixture begins to boil, add rice and stir-fry until grains are coated. Add about 4 cups of water to pan and simmer for about 10 minutes, gently stirring so rice cooks evenly and absorbs the liquid.
Add chicken, chorizo, artichokes and saffron. Cook about 10 minutes more. Add shrimp and any clams or mussels if using, push into mixture. Give paella a good shake or light stir and let it simmer, without futher stirring, until rice is al dente, about 15 minutes.
During last 5 minutes of cooking, when rice if fillin pan, can add 1/2 cup peas, sliced roasted red peppers and lobster tails if using. Paella is cooked when the rice looks fluffy and moist, and should be starting to toast at the bottom of the pan.
Serve from the paella pan with wedges of lemon.
