Refrigerator cookies that are rolled and cut into shapes, especially fun for the holidays. Also included is cream cheese frosting that is great! Sprinkles are always good.
Mix sugar, butter, eggs, vanilla and almond extract. Stir in mixture of sifted flour, baking powder, and salt. Refrigerate 2 hours. Use 1/4 of dough at a time - this is important because trying to work with more than that at a time will make the dough soft, sticky and difficult to roll and cut out. Roll 1/4 inch thick, use flour as necessary to keep dough from sticking to surface of counter. Cut into shapes with cookie cutters. Try to use approximately equal size shapes so that cookies cook evenly. Preheat oven to 400 degrees. Bake on parchment or foil lined cookie sheet for 6 to 8 minutes. Do not overcook!
Cool and frost. For frosting, mix above ingredients, cream cheese, butter, vanilla, and almond first, then mix in powdered sugar. add food coloring last.
