Wendi Peters' citrussy cream puds and light biscuits are easy to make
Former Corrie actress and Celebrity MasterChef finalist Wendi Peters' lemony puddings are the perfect, refreshing end to a winter warmer dinner
Method for the Lemon Cream with Raspberries:
1. Preheat oven to 150°C
2. Grate the lemon zest into a bowl. Add the lemon juice, sugar and very well whisked eggs.
3. Combine the cream with the lemon mixture and pour into the jug. Leave to stand as long as possible.
4. Pour the mixture into crème brule dishes and bake in a bain-marie for 15mins until they have a slight wobble.
5. Crush the raspberries with a little icing sugar and put through a sieve to make the sauce – keep a few raspberries back for decoration.
Method for the Lemon and Almond Puff Pastry Biscuits
1. Pre heat oven to 200°C.
2. Dust piece of parchment paper with icing sugar and lay the sheet of puff pastry on top. Brush it with melted butter.
3. Mix the sugar and lemon zest and sprinkle evenly over pastry.
4. Drizzle generously with honey.
5. Use the paper to help roll the pastry up tightly making sure to tuck in the sides as you go.
6. Wrap up the finished roll in the paper and rest in the fridge for 5-10 mins if possible.
7. Cut into approx. 1 cm slices.
8. Place on a lined baking tray and brush with a little butter.
9. Press them down gently to stop them losing their shape as they rise. Dust with icing sugar and bake for 10 mins.
10. Remove from oven. Dust with a final sprinkling of icing sugar.
