Lemon-Glazed Chicken with Mushrooms from WW Magazine
Sprinkle chicken with salt and pepper; drizzle with 2 tablespoons lemon juice.
Heat a large skillet over meddium-high heat. Coat pan with cooking spray. Add chicken; cook 2 to 3 minutes on each side or until chicken is browned. Remove chicken from pan, and keep warm.
Add mushrooms and garlic to pan; saute 3 minutes or until mushrooms are tender. Add remaining 1 tablespoon lemon juice, chicken broth, parsley, and capers. Return chicken to pan. Cook, uncovered, 2 to 3 minutes or until thoroughly heated. Garnish with lemon wedges, if desired.
YIELD: 4 servingss (about 4 oz. chicken and 1/4 cup sauce)
