Mix mayo, mustard, and vinegar in a small bowl. Peel eggs and slice in half. Separate yolks from whites and place whites on serving platter. Crush yolks and then add to mayo mixture. Gently mix in olives and capers.
Put mayo mixture into a sandwich ziplock and snip one corner. Fill whites with egg mixture. Sprinkle tops with parsley.
