1. Temper the beef - leave it out until room temperature.Trim the brisket.
2. Kosher salt and pepper the brisket.
3. Heat the oil in a dutch oven on high heat. Sear the brisket on all sides for two minutes per side.
4. When seared, remove from dutch oven. Add the remaining ingredients to the dutch oven, and stir.
5. Return the brisket to the dutch oven.
6. Cover and put in the dutch oven for 3 hours or so.
7. Remove the brisket to rest 10 minutes. Put all the dutch oven contents into a food processer and create a sauce.
8. Serve with some of the sauce over the meat. Make homemade tortillas to put the meal over the top. Serve with cilantro and Mexican Oaxaca cheese.
