Meryl's "Good-thing-I-know-Meyers" Parmesan Orzo

Ingredients

1 tablespoon Butter
1 cup uncooked orzo; (rice-shaped pasta)
1.25 cup chicken broth; (low sodium fat free)
1.25 cup Water
1.25 cup fresh Parmesan cheese; grated
2 tablespoons fresh basil; chopped
0.25 teaspoon Salt
0.25 teaspoon fresh ground pepper
4 teaspoons pine nuts; toasted

Preparation

1. Heat butter in a medium saucepan over medium heat. Add orzo, and cook 3 minutes, stirring constantly. Stir in broth and water; bring to a boil. Reduce heat; simmer until liquid is absorbed and orzo is done (about 15 minutes).

2. Remove orzo from heat; stir in cheese, basil, salt, and pepper. Sprinkle with pine nuts. Serve immediately.
