1. Melt butter in a medium skillet over medium-high heat.
Addm mushrooms, onion, a pinch of salt; cook, stiring occasionally, until vegetables are golden and tender, about 7 minutes.
Let cool slightly, 5-10 minutes.
Add cream cheese, stir to combine, stir in chives and parsley, season with course salt and fresh ground pepper.
To assemble, place 1 tsp filing on one half of each wonton wrapper. moisten edges of wrapper lightly with water, fold opposite side of wrapper over to enclose filing, pressing out any air and sealing edges tighly. Bring the two outside corners together and press tightly to seal, moisten with more water if needed.
Bring large pot of vegetable broth to boil, add carrots, celery, garlic, leek (any other veggie you have), cook wontons until wrapers are tender and filling is heated through- about 3 minutes.
