Dragon's Way healing foods
1. Wash the mushrooms. Dice half of them and thinly slice the other half. Use all the stems, because they will be pureed.
2. In a saucepan, bring 1 quart of water to a boil and add the diced mushrooms.
3. Reduce the heat, cover, and simmer until they are tender.
4. Wash the parsley and chop coarsely, removing the bottom stems; set aside.
5. In a blender, puree the cooked mushrooms with the parsley, garlic, salt, and pepper, in small batches and set aside.
6. In a soup pot, heat the oil, add the scallions, celery, and soy sauce. Cook until the celery is slightly tender.
7. Toss in the sliced mushrooms, cover and cook for 5 minutes on medium heat.
8. Add the puree, reduce heat, and simmer for about 5 minutes.
Makes about 12 cups of soup.
