I have posted another flour tortilla recipe on this site that used to be my go-to recipe for taco night, but I recently found a much easier and better tasting recipe, so it's the only one I use now.
Mix all ingredients EXCEPT boiling water (I mix all the dry ingredients first, then add the oil and mix). You want to mix until the oil has formed little balls in the mixture. While you are mixing, place 1 cup of water in the microwave for a minute or 2 (it's ok if it's boiling, just be careful as you're mixing it that you don't burn youself). Add around 3/4 C. of the water to other ingredients and mix. If too dry, keep adding water. Should form nice warm dough ball. Break off ping pong size pieces, and roll out nice and thin, fry on medium high frying pan (dry pan, no oil or butter) until brown spots form on both sides. Should make 10 - 12 medium size tortillas
I use my silpat silicone baking mat to roll these out on, if you don't have one, you will probably need to put a little flour on your surface to make sure they don't stick. I like to roll them really thin, and then as I cook them, I place them in our tortilla warmer. The heat of the cooked tortillas steams them and keeps them really soft and easy to roll. I always start with 3/4 cup of the water, and kind of knead the dough in the bowl to see if I can get it to incorporate all of the dry bits. If not, I add a little water and knead a little more. You really don't want to knead the dough to develop gluten, just enough to mix all of the dry ingredients in.
Because you use very hot water in this dough you don't have to wait for the dough to rest or refrigerate it, or anything else like that, you just mix the dough and you can start rolling out the tortillas immediately. We have multiplied this recipe with great results in the past when making many tortillas for a party.
