This recipe is awesome when there is no gravy. The pairing of the rutabaga and parsnips adds an extra, tasty dimension. For presentation, sprinkle or stir in fresh garlic chive tops before serving.
Peel potatoes and place in a large pot of water; add water if necessary to cover potatoes. Add 1/2 teaspoon salt. Bring to boil, reduce heat and simmer, covered, 20-30 minutes, or until done - a fork can easily be poked through them.
Using the beaters of a hand mixer (not turned on yet), break the potatoes apart. Using a slow speed, beat until smooth, about 1 minute.
Add warmed Rich's Non-dairy Creamer, melted Fleischmann's Unsalted margarine, and salt and pepper to taste.
Beat on low speed until absorbed, then gradually increase speed and beat until fluffy.
