Sometimes you want a fast weeknight dinner with less fuss and muss and a LOT less mess. One pan/pot/dish dinners are the bread and butter of weeknight ease, and this tangy, juicy chicken loaded with citrus and spice is a fast and flavorful way to make dinner a breeze and cleanup a snap!
1. Place the brown sugar in a medium bowl and massage in the orange zest. Set aside.
2. In the bowl of a mortar and pestle, smash together the spices, shallots, and parsley until soft and fragrant.
3. Add the herb mixture to the sugar and add the Dijon mustard, lemon juice, olive oil and salt. Stir to combine.
4. Rub the mixture into the chicken and set aside to rest for 15-20 minutes at room temperature.
5. Preheat the oven to 425 degrees F.
6. Spread the olive oil in a large baking dish. Layer the orange and onion slices, then pour in the orange juice. Sprinkle with a dash of salt and place chicken on top.
7. Tent the dish loosely with aluminum foil (careful not to press into chicken) and bake for 20 minutes. Remove the foil and continue to bake for 40-45 minutes, spooning juice over the chicken every 10-15 minutes.
8. Once done (the internal temperature should read 165 degrees F), remove from the oven and let sit for 5-10 minutes. Serve and enjoy!
For our video recipe, we replaced the whole roaster chicken with 3-4 lbs of chicken thigh quarters. The important thing to remember is this recipe is for skin-on chicken, so use whichever type you prefer!
