Boil pasta, set aside. Brown ground beef. But cooked beef and all ingredients (do not drain canned items) in a Crockpot and cook on low for 6-8 hours. Add pasta just before serving (so pasta doesn’t get soggy).
Fast Prep Version: (total time about 1 hour)
Steam cook carrots in microwave. Brown ground beef and some Italian seasoning; add to large stock pot. Saute onions and celery together in olive oil until onions are slightly golden; add red wine and reduce; add mixture to stock pot along with carrots. Dump in tomato paste, beans, tomatoes and beef broth. Add all seasonings (to taste) to the large stock pot. Cook on medium to medium-low for ½ hour.
