Suggest a better descriptionPREPARE the pesto. Place garlic ,basil, parmesan, walnuts, water, sun-dried tomatoes, salt and pepper in a food processor. WHILE you process, slowly pour the olive oil into the mix until all the ingredients turn into a smooth paste (you may have to scrape the sides occasionally).
COOK the pasta and add the asparagus and red pepper to the pot for the final 8 minutes of cooking. ADD the salmon to the pot for the final 3 minutes of cooking. DRAIN the cooked pasta, salmon and vegetables into a colander. PUT the pesto in the bottom of the pot and top with the hot pasta, salmon and vegetables. TOSS together gently to combine well and heat through.
You can use large peeled uncooked shrimp which will take about 4 minutes to poach. You can also make the pesto with any kind of nut in place of the walnuts (pine nuts, pistachio nuts, macadamias, almonds or cashews)
