This is a very good, and very simple to make, PECAN HONEY BUTTER, This butter goes great with cornbread, dinner rolls, and banana nut bread. Try it on waffles also and you will go crazy over it!!!!
Allow butter to soften to room temperature for about 30 mins. Place BUTTER, HONEY, and CINNAMON in a stand mixer using paddle attachment and beat on slow (1-3 on mixers) until blended about 1 min 30 sec. turn mixer up to medium high (6-7 on mixer) and slowly ad OLIVE OIL so it can Emulsify. butter will begin to fluff up and thicken. and look like spreadable butter (i can believe its not butter). place in a seal able Tupperware container and refrigerate to harden...
