My version of the Philly Cheese Steak with baked french fries and spicy garlic ketchup
Freeze ribeye for at least 45 mins.
Add 2 tablespoons of extra virgin olive oil to med-hot cast iron skillet. Add onion, saute until softened then add sliced bell peppers. Once onions are translucent remove from pan and set aside.
Shave ribeye into thin slices. Season with steak seasoning and salt and pepper.
Cook steak until med. Remove and set aside.
Cut french bread to desired length. Slice individual pieces and place on cookie sheet. Add meat, peppers/onion mixture and cover with mozzarella cheese.
Place under broiler until cheese is melted and browned.
For Baked French Fries:
Heat oven to 475 F.
Slice russet potatoes to desired french fry size. I cut mine like steak fries.
Place sliced potatoes into a bowl of water and let sit for 10 minutes. Drain potatoes and dry with towel.
Cover a large rimmed cookie sheet with parchment paper. Add 1/4 cup of olive oil, reserve 2 tablespoons, then place potatoes in one level. drizzle with remaining oil. season with salt and pepper.
Bake for 10 min. Flip potatoes and cook for additional 10 min. Flip again and cook for 5 min. Continue flipping and cooking for 5 mins at a time until potatoes are browned and crunchy.
Spicy Garlic Ketchup:
Combine ketchup, garlic and pepper in a bowl. Mix thoroughly and enjoy!
To make the philly cheese steaks even better add mayo or a spicy chipotle mayo!
